Mit dem Album Fermentum setzt eine neue Generation des ungarischen Folk-Jazz ein Zeichen: Kovász - ungarisch für Sauerteig - erneuert die jahrzehntealte Tradition des Genres sowohl in der instrumentalen Besetzung als auch in der Herangehensweise. Bandleader Gergő Kováts hat sowohl in der Jazz- als auch in der Folkwelt Fuß gefasst, so dass sich seine Kompositionen der Volksmusik nicht einfach aus der Perspektive eines Jazzmusikers nähern, sondern alle Einflüsse, die er und seine Bandkollegen bisher erlebt haben, untrennbar miteinander verbinden und fast schon ein neues Genre schaffen.
