The third institution, the \u003ci\u003etxoko\u003c\/i\u003e or \u003ci\u003esociedad gastronómica\u003c\/i\u003e, represents a more recent and urban phenomenon and reflects an effort to come to terms with urbanization and the anonymous forms of modern life.
